Ingredients

For the Chocolate Cake:

  • 2 1/2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup hot brewed coffee
  • 1/2 cup sour cream

For the Chocolate Buttercream:

  • 1 1/2 cups unsalted butter, softened
  • 4 cups powdered sugar
  • 3/4 cup cocoa powder
  • 4 tablespoons heavy cream
  • 2 teaspoons vanilla extract
  • 1 pinch salt

For the Chocolate Ganache Drip:

  • 1 cup semi-sweet chocolate chips
  • 3/4 cup heavy cream
  • 1 tablespoon unsalted butter

For Decoration:

  • 8 chocolate wafer rolls, cut into pieces
  • 10 chocolate crispy malt balls
  • 6 chocolate sandwich cookies, halved
  • Chocolate shavings (optional)

Directions:

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the milk, vegetable oil, eggs, vanilla extract, and sour cream. Beat until smooth. Slowly stir in the hot coffee until the batter is fully combined.
  4. Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  5. Allow the cakes to cool in their pans for 15 minutes before transferring them to a wire rack to cool completely.
  6. To make the buttercream, beat the softened butter until creamy. Gradually add the powdered sugar and cocoa powder. Mix in the heavy cream, vanilla extract, and salt until light and fluffy.
  7. Level the cake layers if necessary. Spread a generous layer of chocolate buttercream between the cake layers and cover the entire cake with the remaining frosting. Refrigerate for 20 minutes.
  8. Prepare the ganache by heating the heavy cream until just simmering. Pour it over the chocolate chips and let sit for 2 minutes before stirring until smooth. Mix in the butter and allow the ganache to cool slightly.
  9. Carefully spoon the ganache around the edges of the chilled cake to create beautiful drips. Pour the remaining ganache over the top and spread gently with an offset spatula.
  10. Decorate the top of the cake with chocolate wafer rolls, crispy chocolate malt balls, chocolate sandwich cookie halves, and chocolate shavings as desired.
  11. Refrigerate the cake for 30 minutes before serving to allow the ganache to set perfectly.
